Comment: I also sold 15 Mexican Meatloafs and and did NOT sample them! But I did sample the Mexican Meatloaf at this same event a few months before-- and people came in "asking" for it. And other people heard them talking about it and wanted it. I even sold one meatloaf as I was packing everything into my truck. A guy said to me -- you are the Mexican Meatloaf lady. I said yes and laughed. He said that is the best meatloaf he had ever eaten. Another lady heard him and said I've got to try that -- I've heard so much about it. I said it's not too late. She handed me a $5 bill. So I had to unload part of my truck to get it -- but I did it gladly. Gotta love it!

Chicken Enchilada Meatloaf

Stuffed Bell Peppers-
Mix up Mexican Meatloaf and stuff hollowed out green peppers with it! Bake as directed, and melt cheese on top before serving.
1 lb. hamburger meat,
1 cup of Ragu or Prego sauce, divided
1/2 cup grated Italian Blend Cheese
Mix together ground meat, ˝ cup pasta salad, cheese, and Mexican Meatloaf mix. Put into a loaf pan and pour the remaining of 1/2 cup of Ragu sauce over the top and bake for about an hour on 350 degrees.

I made the mix as directed but added about a cup of shredded Mexican mix cheese. I then formed burger patties and baked them on a rack inside of a drip pan (so the patties don't sit in the drippings). When they were done I covered each patty with a slice a cheese so that it would melt. Then I built the burgers. My hubby likes it hot so I put a few jalapeno slices on his. These were awesome. I served them with tortilla chips and Queso with a Kick!
Stuffed Mexican Meatloaf
Mexican Meatloaf mix
1 lb ground meat
1 cup salsa
1 box Spanish/Mexican rice
1 8oz pkg shredded Mexican blend cheese
Sour cream/salsa/guacamole to serve with
Prepare your ground meat with salsa and 1 pkg Mexican Meatloaf mix. Prepare your box of Spanish rice mix until done. Add in 1/2 the shredded cheese. Press out your ground meat in a large baking pan. Place the rice mixture in the center and then cover with meat and form into our loaf. Top with the remaining cheese and bake at 375 for 40 minutes or until done. Cut in slices and serve with sour cream/salsa and guacamole.

Dead Man Meatloaf
Make Mexican Meatloaf in a gingerbread
man pan. Invert onto a plate when done. Place Salsa or Ketchup glob where the
"heart" would be.
For the final presentation, stick a sharp knife into the "heart" area for a murdered man look. Before serving, spread the Salsa or ketchup over the meatloaf. GREAT for Halloween parties!

Spaghetti & Meatballs
with a Kick
Mexican Meatloaf mix
1 lb ground beef (or chicken)
1 cup Rotel
1 cup shredded cheese
Combine all ingredients and roll into 1 inch balls. Place on baking sheet and bake for 20 minutes at 375 degrees. Add to your favorite sauce and serve with noodles! It was so yummy!

1 1/2 pounds hamburger meat
2 small cans tomato sauce
1/2 cup bbq sauce
1 Mexican Meatloaf pkg
1 garlic bouillon cube
salt & pepper
Brown hamburger meat, drain grease. Add tomato sauce, bbq sauce, Mexican Meatloaf mix, garlic cube -- crumble over meat mixture, salt and pepper. Cook on medium stirring well, reduce heat and let simmer for about ten minutes. Serve on toasted hamburger buns.
