Pumpkin Parfaits
Here's another simple dessert that can be partially made ahead of time.
Prepare the Pumpkin Bread as directed. Spray muffin tin with non stick spray. Fill 1/3 full with batter, bake at 350 until done, about 15-20 minutes. These can be made ahead of time or even frozen until you are ready to prepare them. Place the pumpkin rounds in the bottom of a martini glass or other shallow glass. Top with a scoop of Rum Raisin or Vanilla Bean ice cream, drizzle with a dash of spiced rum, top with whipped cream and chopped pecans. Enjoy!

One Dish Apple Pie

Prepare Pumpkin Bread as directed. Place in a greased round cake pan. Top with 1 can Apple Pie filling and top with 1 pkg prepared Fruit Crisp Mix. Bake at 375 until done in center. Cut into wedges and serve warm with ice cream.

Pumpkin Bread Glaze
1/2 C powdered sugar, 1/8 tsp cinnamon, 1/8 tsp nutmeg and 1 Tbsp milk.

Cream Cheese Spread for Pumpkin Bread
Mix the following: 8 oz. Cream Cheese, 2 Tbsp softened butter, 1 C powdered sugar and 1 tsp. vanilla

Sweet Potato Bread

8oz pumpkin (or baked or boiled sweet potato)

I made the pumpkin bread with a baked sweet potato & used applesauce for half the oil & added walnuts.  It's AWESOME!

Pumpkin Cranberry Bread

1 pkg. PUMPKIN BREAD MIX, prepared

            1 (8 oz.) can pumpkin

            2 eggs

            ½ c. oil

            1/3 c. water

1 c. dried cranberries

 

Prepare PUMPKIN BREAD MIX as directed. Add cranberries.  Pour into greased 9x5” loaf pan and bake at 350 for 50-60 minutes or until done.

Pumpkin Granola Muffins

1 pkg. PUMPKIN BREAD MIX, prepared

            1 (8 oz.) can pumpkin

            2 eggs

            ½ c. oil

            1/3 c. water

2 tsp. crushed granola

Prepare PUMPKIN BREAD MIX as directed. Line muffin tin with cupcake liners or spray with non-stick spray. Fill ¾ full with pumpkin batter. Top with 2 tsp. crushed granola. Bake at 350 until done or golden brown.
