Jasmine Rice Bowl



1- 2 large chicken breasts, diced

1 bag frozen asian stir fry veggie mix

1 small can chunk pineapple

1 bag of boil in bag jasmine rice

Thai Chili sauce (optional)




In a bowl toss your raw diced chicken pieces with 3 tbls of stir fry mix and drizzle of olive oil and/or soy. Sautee in your fry pan until cooked. Add in your bag of veggies. When heated add in your drained pineapple. If using thai chili sauce, add in a few tbls or to your desired heat level. Meanwhile boil your bag of rice. Remove from bag and place on a platter. Top rice with the chicken/veggie mixture. Sprinkle the top with chinese rice noodles if you have them.

Chicken Lettuce Wraps

This is a take on the famous chicken lettuce wraps from PF Changs restaurant. One of my favorite things but so high in sodium and calories at the restaurant. Let's make our own.



1 head iceberg lettuce

2 large chicken breast, diced small

1/4 cup onion, diced

1 small can waterchestnuts, drained and diced


2 tbls tgc stir fry mix

1 cup bagged carrot matchsticks (optional)

Alfalfa sprouts (optional)




In a large skillet spray with cooking spray. Add in onion and saute for a few min until translucent. Add in chicken, stir fry mix and about 1/4 cup water and sautee until done. Add in waterchestnuts and heat through.


Take your lettuce and cut off the root. Separate leaves. Use lettuce leaf as a cup. Place your sprouts, carrot matchsticks and some chicken mixture in the center. Fold up like a taco and eat.


You can add other veggies if you like or make some brown rice to add to the layering.
