Comments or Questions: The men sat in the living room watching football and tasting the samples. The women were in the dining room having a great time tasting and ordering (with some help from their husbands). Taco "Soup" reme soup served everyone plus myself and husband (9 in total) plus the hostess had 2 bowls left-over for their lunches the next day!

Chicken Stew Mexican Style in Crock Pot

 

Have taco supreme on the stove top. Used lean ground turkey this time! Delicious!

Microwaved the beans for about 20 minutes, browned the ground beef and put everything in the crock pot. Cooked on high for 6 hours and on low for 1 hour. Fantastic! It turned out great!

We have used the leftovers of this soup (drain the juice) on tostado shells with lettuce, tomatoes, cheese, and salsa. Also, great for making nachos. We enjoyed it and it was a quick, easy dinner.

We didn't have exactly what the recipe called for so I had to improvise. I used the mix, hamburger meat, corn, water, rotel with cilantro & lime (instead of with chilis), 1 large can of diced tomatoes.
I cooked the beans in the microwave. Then added all but the large can of diced tomatoes. Let it simmer for 2 hours then added the can of diced tomatoes. I think let it simmer another hour. Made white rice. Put the rice in the bowl, then the soup (was more like chili at this point) then cheddar cheese & sour cream. Mixed it up & devoured it!!!!!!!!!!!!!!!!
My kids LOVED it. It wasn't too spicy & was very creamy!
